YAMAKI JOZO produces a small, yet well-chosen selection of traditional Japanese pickles – all made in-house from contracted farmers’ vegetables. We have dedicated, long-term customers who desire organic pickles and, as much as possible, our contracted farmers are growing without agricultural pesticides or herbicides. While the majority of commercial pickles found in Japan contain MSG and preservatives, our pickles only contain natural ingredients without additives.

Organic Onion Pickles: made from Japan-grown organic onions with pickling liquid from Japan-produced organic seasoning (rice vinegar, soy sauce, mirin, sugar, lemon juice).

Organic Cucumber Pickles: made from Japan-grown organic cucumbers with pickling liquid from Japan-produced organic seasonings (soy sauce, sugar, miso, mirin, rice vinegar, red pepper).

Organic Sour Plum Pickles: made from Japan-grown organic sour plums with pickling liquid from Japan-produced organic seasonings (soy sauce, sugar, miso, rice vinegar, red pepper).

Takuan (pickled daikon): made from non-chemically treated Japan-grown semi-dried daikon with pickling liquid from Japan-produced seasoning (rice bran, sea salt, brown sugar, organic red pepper).

Bettara (pickled daikon): made from non-chemically treated Japan-grown daikon with pickling liquid from Japan-produced seasonings (organic amazake, beet sugar, salt).

Spicy Bettara (pickled daikon): made from non-chemically treated Japan-grown daikon with pickling liquid from Japan-produced seasonings (mirin, soy sauce, beet sugar, miso, rice vinegar, amazake, red pepper, salt).
